Finishing occurs in stainless steel vats to avoid flavor contamination from used oak barrels and to allow the distiller to determine the perfect time to stop the steeping process. The secondary use of oak chips dramatically dimensionalizes the Doug fir component in the gin, adding warm tannins and spice to the
